How do these colleges stack up against what I'm looking for?

Pay attention to what people here are telling you about med school acceptance.

Schools like Harvard and Stanford do not have ultra high med school acceptance rates because of some “secret sauce” that allows them to better prepare their pre-med students compared to other less prestigious schools.

They have high med school acceptance rates because they already select for the highest GPA and highest SAT/ACT students in the country. So they already have the best natural standardized test-takers in the country in their student body. It is no surprise their average MCAT scores are higher when they were mostly 1500+ SAT students in HS. And at a place like Harvard or Stanford, their legacy and athletic admits that might not be quite as high performing tend not to go into medicine anyway but more track to business.

There are lots of reasons to go to more prestigious schools. But thinking it is the ticket into med school is not one of them.
