How do the admissions officers know whether you're telling the truth about your extracurricular activities? As far as I know, if you don't put something like IMO (which they can check) they'll just have to believe in what the applicant says. If that were the case, wouldn't it be unfair for the truthful because there will be liars?

They usually don’t check but if something seems outlandish or so, then they will confirm, possibly from the person who organized/organizes the EC or anyone else that could possibly confirm or deny.

If not that, then they can also see in the interview. They will ask you questions about your EC and they will be able to tell if you know what you are talking about or not. Usually, the person interviewing you will have knowledge on the subject and will quiz you on it, if not it is still obvious after the hundreds of interviews that they have done.

Other than that, they can verify with the rest of your application. If you say something in the EC section and another thing in the essay then they will know. If you say you spend 7 hours every day running Origami club or something then they will know.

You shouldn’t worry about this because there really is no point in lying. More likely than not they will find out and it isn’t worth the risk.

Colleges generally do not verify ECs. Some, such as UCs, do a random sample of applications and then determine validity of ECs of those selected. Others may just check when they feel and application looks suspicious. If college does interview, possiblity questions could be asked then.
