I’m researching UT Austin and I want to find the current and/or maximum enrollment for each course. Anyone know where I can find this number?
Also, what kind of websites and/or apps do you people use to help with your academic life (like Ninjacourses)?

I don’t think there’s really a good way for a UT student to look up the enrollment for a course. One way to try is to look up the course instructor surveys for a class in a previous semester that it was taught but that does not guarantee that every student in the class filled out the survey. The CIS results show the number of respondents so you know there was at least that many people in the class in that semester.
Another way is to walk to the room before class and check how big the room is.
Some of the faculty on campus have the ability to see the enrollment and capacity for courses. I met with a math advisor who was in charge of the math department and she had the ability to get that information and gave it to me. I cannot guarantee that your advisor will have that information too.
As for sites to aid my academic life, I use myEdu for grade distributions and professor ratings/comments and Khan Academy for help with some of my math and science courses.

I use myEdu just for professor ratings and reviews. You can use myEdu to select classes to help you visualize your schedule (not your official schedule) if you want. It works just fine for that. But, for me, I don’t have any trouble visualizing my schedule when I write it down on paper.
