How long an essay

The college I am applying to does not have a specific number of words that are need in the essay. Should I write all the words that are necessary to get the point across or should I stop at a certain number of words?

Just write a page or less. That's a good general rule to follow- as long as you can fit it on one page, it's fine.

Should it be double or single spaced?

If they don't give a word limit, you are in luck. You can write as much as develops your story or ideas. I'd say try to be very economical in your words and respect that they don't have a lot of time. Make it succinct, but don't worry if it fits on a page or not. They are checking if you use good judgement or just blather on. Are you applying Chicago?

single spaced

One page, single spaced, but at least size 10 font. And keep in mind that longer is not better. There is a famous saying: "I didn't have time to write you a short letter, so I wrote a long one..." You don't want your admissions officer to feel that way about your essay.
