how many classes in my major should I sign up for next semester and semesters after that?
In my major, I already have my first core class done (of 4), two of three classes in my Area of Concentration (Sexualities) done & one of two electives done in my major.
I’m a full-time student who is taking my last GENERAL core requirement (things that everyone has to take) this summer.
What year are you in? Does your college/major have a sort of template to be used to show what classes to take each year? really you should talk to your academic adviser about this.
I will, but to answer you, I tried to take a pic of the template and upload it but CC wont allow access to the link (tried and failed). I’ll be a junior this fall.

Yea it kinda does and I’ll be done with core (except language) after this summer, but is it normal for a junior/senior to be taking only one or two courses a semester and still be considered full time?

You’re going to have to check with your school on how many units are considered full-time. At many schools, only taking one or two classes would be considered part-time.
Make sure you have completed all of your other requirements. There may be requirements on the minimum number of units you have to take over four years, for example, so even if you have completed your general education requirements and only have major requirements left, you may still need to take elective courses in order to meet the minimum number of units. Make sure you’ve completed all of your general education and university requirements, as well.
If you really only need to take 1-2 courses in your junior and senior year, you can consider graduating early and taking more courses a semester. You can also consider getting an internship or doing research (these can often be done for credit, as well). Or perhaps you can get a job (or increase your hours at a current job). If you’re taking a light courseload, this can be the perfect time to beef up your resume.
Generally there is a minimum number of credits you have to take to graduate. Usually it is something like 120 or more, which is assuming about 15 credits per semester. Somewhere in your undergraduate information it will tell you that. So make sure you have that taken into account. Also, most colleges expect you to take at least 12 credits (assuming 3 credits per class) to be full time. You need to talk to your adviser about a plan. Like the above poster said, if what you are saying is true and you only have a few courses to take, then you may want to pack them into less semesters so you can coop/intern/study abroad/graduate early. Unless you had a bucketload of credits coming into college, you need more credits to graduate. These can be open electives that do not fulfill any particular requirement other than giving you credits.
