How should I list non-STEM Extracurriculars if I haven't had a lot of STEM Opportunities?

Hi, I’m a current junior interested in applying to MIT next year. I know that MIT only lets you list four extracurriculars on their application, but I have had barely any STEM opportunities since I live in such a rural location. The only STEM outside of school (I’m a competitive applicant academically) has been in the summer. So, would it be best to list non-STEM extracurriculars that take up most of my time or would it be better to list a few of the small STEM activities I’m involved in throughout the year?
Thanks!

List the non-STEM activities.
