How to go about an unconventional essay topic?

I read that colleges like to see you write about a mundane topic and bring it to life. It suggested topics like the subway ride to school and family dinner conversations. I've been drafting a few essays about everyday things like that, but I'm struggling to fit in revelations about myself. The actual essay is well written so far, but I'm at the point where I need to add some details(personal reflections/lessons) that would make a college want to accept me. It's hard to describe, but if anyone could help me it would be greatly appreciated.

Basically, I've heard that you can write a good college essay about anything. I've heard of people writing strong essays about the randomest topics -- their love of cheese, a trip to mcdonalds, a bus ride. My question is how do you reveal yourself in a positive way while writing about impersonal topics like these? How do you go about adding things about yourself that make you attractive to colleges in this type of essay?

These people did not pick their topics at random. They thought about what was meaningful to them, and turned what was meaningful to them into a college essay.

What is meaningful to you?
