Also, if I want to start my own environmentally friendly business in the future, should I consider majoring in economics and take the ISEN courses instead of majoring in environmental sciences? (I got accepted into the 5 year dual degree program for the school of music and school of arts and sciences)

No, you don’t. Don’t sweat the same too much. A lot of these classes are intro bio classes. There are also a lot of upper level anthropology classes that you wouldn’t be taking unless that’s truly what you want to study.
This field is probably the most multidisciplinary and the least defined. I never heard of anyone saying “XYZ is known for environmental science”. Stanford is probably the only school I can think of simply because it is among the best in all the departments/fields in which you’d take classes (biology, chemistry, environmental engineering, earth sciences, energy, policy etc).
