I’m only a sophomore, so it’s nearly impossible to determine my chances of getting into a school now, especially without SAT scores. However, my goal is to attend a college with a 30% acceptance rate or below.

Well you’re certainly on the right track. One thing to note (and that you can’t likely alter) is how much influence you have and frankly, how nice you are. This matters and your rec letters will either be silent about it or glow with it. How nice you play with the other kids in the sandbox matters a lot to top colleges who have a surfeit of super high academic applicants.
Don’t chase club memberships just to add them. Feel free to drop and add ECs as your desires lead you. Do things because of their inherent value – not b/c you get to put it on your college app. Top colleges look for people who think this way – because on their campuses, no one will be looking at what you’re doing. They want kids who have innate initiative and will take advantage of their offerings. Good luck
