Apparently the UC schools randomly choose 10% of their applicants to verify one thing on their application, like an extracurricular, before they consider them for admission. What if a person lists independent study (no formal, documented or online courses) of a language/culture as an extracurricular, as something they genuinely invested time into?

I saw a thread by someone in a similiar situation, but they verified their independent study by sending scores from the AP exams of the languages they studied. How would a person verify independent study of a language/culture if they weren't confident enough of their knowledge/skill to take such exams, or if it was too late for them to take those exams in time for admission consideration?

Please don't give me answers along the lines of "you shouldn't be worrying about something so trivial on a college application" or "an extracurricular like that wouldn't make a difference, so they won't bother checking", because I consider myself to be an individual of utmost integrity, and I wouldn't want to list something I couldn't verify for fear of being seen as a liar.
