HS Junior in search of some direction?

Hey y'all. I was wondering if anyone would offer some advice / outline some opportunities regarding college and beyond. I've sort of become lost in the whole scheme of things.

About myself:

Junior at prestigious private Catholic High School.
GPA: 97 Weighted Average
SAT: Will take in Spring. Projecting 1320 - 1440; Math + Crit. Reading
Rank: School does not rank (I'd say roughly 20 / 200)

Courseload: 0 APs, 2 Honors Freshman yr.; 1 AP, 4 Honors Sophomore yr.; 3 APs, 3 Honors
currently (most rigorous offered)
AP Tests: AP World History - 5, currently taking AP-Calc I, AP Physics AB, APUSH
SAT IIs: Biology E - 700, Chemistry - 640, Math I - 620

ECs:
- Newspaper (Co-editor-in-chief)
- French Club
- Intramural Sports
- Math Team
- Science Team

Volunteering:
- 200 total hours; Counselor at summer camp for mentally-challenged kids, local soup kitchen.

Colleges that interest me:
Villanova
Fordham
Notre Dame
Syracause
Maryland
Rutgers
Duke
UNC-Chapel Hill
Virginia
Michigan
Boston College

I'm interested in engineering and the sciences, although I have no clue as to what type of engineering I would pursue. Assuming I score a 1400 / 1600 on my SATs, is my list of colleges much too ambitious? Which APs should I take Senior year that would best suit an engineering student (i.e. Biology, Chemistry, Physics BC)? Discuss...thank you.
