HS senior year schedule help?

So I'm planning to apply to UCs and some private schools in CA like chapman and pepperdine. I'm planning to retake my SAT on october (aiming for 2100) and some other SAT subject tests.
But I feel like my senior year schedule is kinda overwhelming for me .. because I still need to start my college app, essays, tests.. bleh :p
so i wanted to get some advice!
right now I'm taking :
AP Econ
Dual enrollment spanish
digital photography
AP chem (maybe I should take AP bio instead)
Dual math
AP Lit

i feel like dual spanish is gonna kill me but then if I drop any of them.. maybe colleges will not like it since it's not that even rigorous? What do you guys think?): I want to spend a lot of my time writing essays instead of working on school stuff... idk. ugh!
and my intended major is literature or music.

If your intended interests are lit/music, I’d switch APChem for APBio. It’s plenty rigorous, just make sure to stay on top of your testing (do some practice tests) and brainstorm some essays before school starts. Good luck!!

Drop science as a whole. You are jut loading up on classes you don’t need and your course selections will look superficial. Take classes that you are interested in that will challenge you. Try to take a history course if it is possible.
