So this doesn't apply to me yet because (1) I am a freshman (2) I don't know where I want to go to college yet (3) I don't know what I want to pursue in college/beyond, but it was just a question I've been wondering about...

If repeatedly had 'poor' grades (compared to other subjects...let's say low Bs compared to As/A-s in other classes) on your transcript in a certain subject area (ie science), but applied to a college saying that your intended major was chemistry or something related to the sciences, would that hurt your chances of admission? If yes, would it hurt less to go as undecided?

This is a really random question but would love to hear thoughts, thanks!

it would hurt your chances because it shows colleges that you are bad at decision making. They will most likely think “Why is this person applying as a chem. major if they only get mediocre science grades?”
Of course since you’re only a freshman you can most certainly raise your grades in the science courses. Just saying. But it doesn’t always pay off to put undecided because colleges will think that you are Unable to make a decision. It always comes down to decisions.

Try to find something you love AND are really good at. It’s all about balance.

Putting undecided doesn’t indicate that you’re unable to make a decision. It simply indicates that you recognize that you aren’t yet sure what you want to do. Most students don’t know what they want to do by the first semester of their senior year of HS, so they’re not going to hold that against you. Many of the people who put undecided simply have a broad range of subjects that they are interested in and excel at.

However, as for the OP’s question, applying to a science program with poor or mediocre science grades will likely hurt your chances, as colleges will think you won’t be able to handle their science curriculum. (It’s more the ability to handle their curriculum than it is their assessment of your decision-making skills.)

2 additional questions: If you want to major in science and have a bad science record, can you say you’re undecided and then switch to science or is that dumb? And secondly by a ‘bad’ record I don’t mean Cs and B-s, more like B+s and A-s. So not bad at all, just not as great as other subjects I guess
