Many of the land grant colleges have agricultural engineering and chemical engineers do a lot of food processing.
I would assume any CAD package and Windows would have settings that would let you use colors or shades of grey that you can see.

I think most visually impaired folks would be much more limited than you are.
Just don’t be the guy trying to figure out if my hamburger meat is fresh.
I would probably eliminate inspection as a potential career, in any field, and just go forward like anyone else. that’s like 5% of jobs.
