I'm in the process of choosing my IB courses for next year, and while I am satisfied with what I've come up with, I wanted to know if there were specific IB courses that could help more than others for undergrad english. (with possibly a minor in history...)

So far, I have.

English Lit HL
French Lang&Lit HL
History HL
Psych SL OR Geography HL (depending on the school I attend - International school kid life ugh. - might drop the HL if I find the courseload to be too overwhelming.)
Chem SL
Maths SL.

Any input/comments would be greatly appreciated, thanks.

You will definitely have a lot of writing in your course load (especially history HL) so I would say that you’re selected classes are pretty good for an english major. Additionally, history or english EEs are MUCH easier than science EEs, so you will be able to pick up a few extra points there.

You’re going to do a lot of writing in IB anyway. But yeah, looks good.

IB will prepare you anyways, but as far as getting credit goes, you’ll be able to (most likely) get a lot of general education requirements out of the way with your IB credits. Especially if you take math/science now. Good luck! (:
