I've been hearing something of this allowance: Some specific law schools allow you to defer your entry to their schools by one year. (E.g. You applied for Fall 2011 admission, were accepted, then you chose to defer your acceptance and instead enter in Fall 2012.)

Is this possible? Which law schools allow this?

Yes, it’s common. I doubt there’s a definitive list out there. Check the websites of the law schools of interest to you.

My understanding is that many law schools require that you “apply” for the deferral, but it’s granted if you act promptly. If you wait until June to ask, the answer might be no, as it will be harder to fill your slot.

Some defer only for specific reasons–a fellowship, Peace Corps, TFA, etc.

One caveat: if you’re in the running for merit money, at least some law schools won’t allow you to defer the $. You have to reapply and compete again.

Again, check the websites of the law schools of interest to you.

One universally accepted case is if you have to defer because you are part of the Reserves/National Guard and your unit was activated/mobilized for a deployment.
