No, colleges don’t care what AP exams you take in senior year. They would only withdraw/rescind admission offers for steep drops in letter grades or misconduct.
They understand that you may not want to take AP tests that don’t actually count for anything (they don’t at Caltech)
dont drop the course in any event.
Have you already been accepted at CT?
If so, then fine if you want to skip the test.
If NOT , then depending on where you are accepted in April, you may want to take the AP exams for course credit at the college you do enroll in.

Does anyone know whether Caltech requires students to submit their AP grades taken in grade 12 (the grades come out in July so do we still need to send the scores to Caltech) or it’s voluntary?

If you drop the class, then Caltech may rescind your admission (although probably not), but skipping the AP test is fine.
