If the college I'm applying to requests 2 subject SATS and I've taken 3, do I choose

which ones I send, or do I send all three and they automatically take the two highest?
And this college said that I had to send in all my SAT subject tests, but I'm not sure if they mean all the dates I've taken for the 2 required ones, or all 3. ("In addition to either the SAT or ACT, you must also take two SAT Subject Tests. For Columbia College, you may take any two; for Columbia Engineering, you must take any mathematics test and either Physics or Chemistry. Students must submit all SAT Subject Test scores from all test dates.")

I don't want them to take my Chinese subject test as one of the 2 tests, since I'm a native speaker and I've heard that that makes me look bad.

email the college…

Send them all in. Taking the SAT for a language that you are a native speaker of does not look bad. That is, unless you received a poor score.

Columbia requires that you send all tests and they mean all; there is no room for the incorrect interpretation that you are looking for.

i’m not “looking” for an incorrect interpretation, i’m just wondering…

and do they just look at the 2 highest scores then?

They do look at the two highest in regards to the two required Subject tests. Though, they probably will consider the third as well since you will be including it.

But, as dignified said, it does not look back for a native speaker to take a subject test in the native language. It looks bad to have a bad score on it, but that’s because it’s a bad score and native language has no bearing.

You should be fine with sending each test date as they require it.

The dean of admissions for Columbia spoke at my son’s school and he told everyone that they require all scores be sent because they consider Score Choice as a probable source of errors (i.e. people accidentally not including their best scores). They only consider your highest scores.
