Hello, i will be applying to UC Irvine, Davis, and santa Barbara this year, and i was wondering, is my gpa only calculated from my sophomore and junior year? Or will my senior year be included.

UCs focus primarily on academic courses taken in grades 10 and 11. They drop the +/-, ignore non-academic courses like PE and cap the # of AP bonus points you can apply. They will see all your grades including freshman year and recalculate your GPA in various ways, weighted, unweighted, capped, uncapped etc (the more advanced evaluation is important to UCB and UCLA).
Sr year grades aren’t in the books when you submit your application. Some students are asked for them, others aren’t. Generally, a dramatic improvement Sr year won’t open new doors but, a fall-off (even in an elective course) can get your acceptance rescinded.

Good luck.
Thank you!
