I noticed for Brown that if you pick chemistry as an intended major, you have to write an additional essay. What if I just put undecided? Would this affect my chances of getting into chemistry if I’m admitted to Brown? Because I really don’t want to write another essay…

If admitted, you can choose Chem later easily. But you’re missing the point here:
Brown wants an extra essay b/c they are specifically recruiting for certain fields and want to note hi-quality applicants. If Chem is truly your potential major, then see it as an opportunity to impress that your (very competitive) peers do not have. If I were you, I’d see it as an opportunity to showcase yourself, not as an extra burden.
