My Princeton interview today, and I have an interesting question for you guys...
In her email my interview specified that "this interview will be very informal. There's no need to prepare or bring anything with you." It's at the local Starbucks. Now, I realize that the comment about informality was mostly about the content and tone of our conversation, BUT do you guys think I could wear jeans (I mean realllllllly nice jeans. Rock and Republic :D)???

Jeans should be very appropriate in this scenario then. But I'd suggest avoid wearing bling-ed out jeans, acid wash, monogrammed or basically jeans that are too avant garde. I think Rock and Republic usually carries rhinestone-studded jeans, no? Anywhoo, the key is to keep your outfit more demure.

You are in Texas - right? Here in CA jeans would be OK. If the shirt was a polo or button down or dressy T. In Texas, maybe you want to go with khakis or some kind of pants that aren't jeans. Even though she says informal you still want to show respect. It also depends on the age of your interviewer. I am speaking from the perspective of someone born in the 1950's:). Showing respect however is always good as long as it doesn't go so far as to make you feel weird or look like a mini-adult.

In my part of Texas jeans are considered somewhat dressy with shorts and sweat pants considered less dressy. My impression of what you quoted is that the interviewer was mainly saying not to bring a resume or other extra printed materials. Your jeans sound fine to me but I would wear a nice shirt or sweater. It's chilly today so I'm guessing you won't be wearing anything too skimpy anyway. Good luck. Hope it goes well.

I wore a shirt and tie, but I also came from school, for what it's worth.

I think jeans would be fine as long as you aren't wearing an Avenged Sevenfold shirt or whatever with it.

And that's pretty much all of the fashion talk you're going to squeeze out of me.

I think jeans are fine!
You could wear a dark-wash pair of jeans and a nice polo maybe?
