I'm a prospective applicant for the class of 2011.
How easy (or difficult) is it to transfer from one school to another once one is accepted to Georgetown?

The most difficult intra-school transfer is into the SFS, simply because it's hard to come into the SFS sophomore year and still graduate on time. Usually you basically just talk to a dean, explain why you want to transfer, what your course of study will be and summarize that into a sort of essay. It's also possible, though they claim it isn't, to transfer the summer before.

Double majors are possible in all schools with the exception of the SFS (where it would be impossible).

In the MSB you can double major with a College major. The SFS does not allow double majors at all. The SFS majors are almost completely interdiscplinary and really cutomizable based on what you want to do. With the language proficiency requirement in the SFS you already basically have a second major anyway, especially if it's intensively-taught.

Is it possible to take classes associated with another college (i.e. MSB or NHS)? I was accepted into the College but might be interested in Marketing or Neuroscience (I'm quite undecided). These are not really areas offered by the College so I'm wondering how flexible the range of courses available is.

Yes lights out it is possible to transfer, but it is not guaranteed that you can transfer and it would be difficult to transfer and then graduate in 4 years. Plus, that's really not the way to go about getting into SFS if that's what you wanted in the first place.

I'd have to imagine its very difficult to transfer into SFS after freshman year because there are probably a decent amount of students who applied to NHS/MSB/College who either had that planned all along or who perhaps found an interest in IR while at Georgetown (its location in DC makes that a strong possibility), although I'm unsure.

I'm also wondering if it would be possible for me to double major in say Poly Sci. in the college (what I was accepted into) and maybe finance or marketing in MSB. If not, is it possible to minor? Thanks!

well, when i decided to apply to georgetown i spent forever trying to pick between the two, haha. so now that i realized i have the slightest chance of a choice is just kind of surprisingly nice :)
