Is it difficult to get into University of Edinburgh as an American?

Yeah, except for the pesky little word, minimum. Clearly stated, as you say.

@KJohnsonio re LSE I think you will find that includes Postgrads on which there are no restrictions. Undergraduate places are government funded and regulated.

The actual experience itself is a little hard to compare as they are so different, though it’s probably fair to say that the best American comp for St. A’s is W&M (well-regarded public uni that is smallish for a public and not a research-powerhouse).
In terms of admissions for Americans, it’s true that outside of Oxbridge and LSE, the UK unis just aren’t as difficult to get in to as the Ivies/equivalents (even for Imperial, I believe you just need high enough scores).
Getting out (with decent marks) is another matter*. In that regard, UK unis may be similar to well-regarded STEM programs at US publics.

*granted, a lot of Firsts and 2:1’s at the top English unis these days, but that may be due to an improvement in the quality of the student body as well; I believe there are far more International students at UK unis these days compared to decades ago.
