I'm applying to all of the UC's except Riverside and Merced, with my top choices being LA and SD. Recently, I found out that a community college class I took in the summer after my sophomore year, I got a C in! Should I/do I have to include it? If I have to include it, will it affect my chances for admissions?

i was wondering the same thing, for elective classes like Computer Aided Drafting

Yes you have to include it. Here's the quote from the UC application:
[quote]
List all colleges/universities you have attended, including University of California campuses and any institutions outside the United States. Be sure to list all institutions you attended - regardless of the length of attendance, whether courses were completed or whether you believe the record will affect your chances for admission to the University or yield transferable credit. If you provide incoplete or incorrect information about the schools you have attended, your admission to or enrollment at the University of California may be jeopardized./quote
