I'm a senior planning to take a year off and apply to grad school for fall 2009. Several of the schools I'm applying to ask for 3 letters of rec. Is it typical that these would all be from professors? Are letters from internship supervisors acceptable?

Without knowing your field, it is impossible to say.

However, most graduate programs in the humanities DEFINITELY require all three of one's letters to be composed by former professors.

I will tell you that it should be no problem to ask your former professors a year from now. Simply send them an updated resume, remind them of which classes you took with them and the grades you earned, send them GRADED copies of research papers you wrote for their classes, and you'll be fine.

studies or archival management.

I'm a history major. I will have taken a total of 11 history classes, including this coming semester. 4 are from one professor (who will write one letter).
However, the other 7 have all been different professors. Only one of whom is still at the school, and I didn't really connect with her...

I would say for the academic fields you want all three of your recommendations to be from professors. But always try to get the best letters from people who know you well (but not mom) and not necessarily the most powerful and mighty professors.
