I'm thinking of taking math I as I am sure I can handle it but I'm not so sure about Math II. If I do Math I and do well is that good or should I just not waste my money?

It varies from school to school, so check for the ones you’re interested in. Some only take Math II; others will take either.

What math classes have you taken so far?

This is the way I see it, in terms of curves (according to sparknotes):

Math 1: 49/50, 780; 42/50, 700;
Math 2: 43/50, 800; 33/50, 700;

If you have the math to take Level 2, go for it. Making one silly mistake on Level 1 could really hurt, whereas Level 2 gives a lot more leeway.

Math 1 is basically

Scaled = 800 - 10(50-R), where R is your raw score. So -1 = 790, -2= 780, etc.

Math 2 is:

Scaled = 800 - 10(44-R), where R is your raw score. So 44+ and you have an 800. Down by 10 each time.

The subject tests are each much harder than the SAT I math, so that’s why the curves are more lenient.
