If I decided to go a little above average and take 15 credit hours for a grade, and an additional 3 credit course P/F each semester (18 credit hours total) to knock out general education requirements I don't care for, would that be looked down upon? I know grad schools prefer you take classes for a letter grade, but does taking that course on top of everything else help compensate?

It just means that they need to look at your high school record more.

no, it is not frown upon. I know a lot of people who take course p/f, even I have taken a course p/f.

Pass/fail is only frowned upon for classes relevant to your intended graduate degree.

A lot of students take classes Pass/Fail because they’re interested in the subject, but it isn’t required for their major. For example, my friend is an AEM major but she took a Human Development class about Children and Adolescence for fun P/F
