Is the subject scores REALLY that important?

Well, the school I plan on applying to (also my dream school) usually admits a 3.0 and and a 23 ACT. I have asked the school multiple times and they tell me each time that the composite score is really all they look at.
Every practice test I have had I flip out on the math, which means I get about a 16 :/ My english on the practice test ranges from 28-34, my reading from 29-35, and my science at 25-30, so my composite would be atleast a 25. I fear as if they see my GPA (I don't have grad inflation at my school. If you miss such as THREE questions on a test, it can put you at a ninty), strong recommendations, four pages of extra-curriculars (95% of which I have been involved in years prior to high school), outstanding (as I've been told) essay, and my ACT subject scores, they may question it. Should I really worry?

Basically most colleges look only at the composite.
