Is doing a dual degree in econ and finance at a top school a good idea? Does the extra degree help in finding a good job, to set up a good work/grad school experience? Or is it better to couple a finance degree with a less-related degree (like math, physics, or engineering) , even though this path may take an extra semester or two (especially with engineering) to graduate?

it's not bad...i can tell you that...

It depends on which field you enjoy. After your first few years on the job in business, your major matters very little. So if Math and Finance are the fields you fancy then go with them. If you enjoy economics then dual major that with finance.
