I heard that anything outside of school is EC, but I am not sure where to cross the boundary. Beside from school clubs,
I took online courses and just self studied some sciences that seems interesting to me. However, self studying itself is unofficial and does not really prove my skill in that area, I am not sure whether this can be considered as an ec. Can it be considered as an EC or is their other way that I can prove it.

According to one admissions blog, reading for fun is not an EC, which is basically what self studying a class is.
Your online classes will show up on your transcripts so don’t worry about accounting for those.
