My favorite projects have so far been for my science classes -- in my Freshman Chem/Phys class we built rockets, roller coasters and a whole slew of other interesting contraptions, and in Pre-HS Bio (summer class) we dissected a bunch of neat things (pigs, frogs, fish, bugs, etc). We also got to go on a bunch of outdoor excursions wherein we would participate in scavenger hunts attempting to find various local flora/fauna (not in Phx for those that know where I live -- up north in the [much cooler] mountains)

One memorable project from freshman geometry was a Popsicle stick/Elmer's glue bridge that we had to build, which had a limit of either 50 or 100 sticks (I forget :s) and had to be 18 inches or so (I think) in length. Mine ended up holding 140 or so odd pounds, if I remember correctly.

Recent years, unfortunately, have placed a special emphasis on papers and essays and the like, so we haven't done too many interesting things in them... :(
