I've always been curious about this..

So I graduate from highschool with decent grades, get into a university and do pretty bad freshman year, if I wanted to start over could I apply to another university as only a HS grad and leave my ****ty freshman year marks in the past? How would they know I wasn't coming straight out of HS?

I don't assume you would be able to do this but my friend did so yeah now I'm curious.

Transfer in to a community college for two years.

Just curious, how’d you mess up freshmen year when you knew that you learned your lesson from the bad marks in High School?

They would know what year you graduated high school by your transcripts I’m pretty sure, but you could always say you took a gap year to work/travel/whatever.

No you cannot just ignore a terrible freshman year. Any respectable college that you transfer to will require a transcript from ALL schools you’ve attended, and if they find out that you omitted something they can dismiss you/reject you. I would not recommend this. If you are worried about your freshman year grades, go to community college.
