Jewish as ethnicity?

Note: This post is not meant to offend anyone.

I am a Jewish girl, and I consider myself Jewish, not American, and I connect with Jewish culture the way an African-American would connect with African-American culture. I am not religious in any way. I consider being Jewish to be my race. Would it be appropriate to write "other" in college applications, and specify being a Jew, or would colleges not accept that?

American is a nationality, Judaism is a religion and a culture. I am proud to be an American just as much as I am to be Jewish, and I don't think they conflict at all. You may not agree, but this is how I see it.

Colleges would not accept that.

I'd also point out that you assume race correllates with culture. Language, religion, and nationality have more to do with culture than race.
