I will be taking the AP Physics B exam next year, and I was wondering how hard it would be to self study AP Physics C: Mechanics along with it. I don't even want to bother with self studying E+M, because I know that will be very hard. However, is Mechanics manageable?

I am not not so sure about it, but I am doing the same as you, but also studying E+M essentially taking all 3 Physics Tests in 1 year. I suggest start studying now, and learn the material early, and spreading out FRQs and MCs tests throughout the year to keep you sharp, and reviewing what you missed and to strengthen the material you already know,

Yes, many people have done the B+C combo tons of times, you just need to be confident and willing in your abilities, and be able to self study at the same time. I assume you will be taking some form of Calculus next year, as it will help a lot, since Physics is just applications of Calc and Math in general.

I just did the B+C combo the past exam administration, and got a 5 on all 3.

I think it is totally manageable. You can learn the concepts in Physics B and then add on calculus for Physics C. You just have to have a great foundation in Physics B in order to build on calculus for Physics C.
