These three schools really appeal to me because of there size, "vibe", location, and impressive engineering programs. I'd love to go to one of them but they are not in my price range. I am number 1 in my class with a 4.0 GPA and have impressive extracurricular's. My SAT scores are pretty good but will hopefully get a little better (1360). My parents make $60,000 a year. Which of these schools would provide me the most financial aid based on both merit and need so I can choose 2 to apply to?

Why are you limited to applying to 2 schools?

Use the school’s financial aid calculator to estimate your cost.

I’d imagine their aid would be in the same ballpark, because they compete so much with each. I believe all 3 promise to meet 100% of proven need. However, it is worth a $50 or so application fee to each to find out for sure, and to be able to compare net prices.
