Trying to find a school known for language interpretation (german and spanish mainly - maybe a little arabic, italian, norwegian, french, or chinese)..also looking at minoring in either linguistics or international studies. I've been looking at Berkeley and U of Mich. Any sort of input would be great.

philology ftw

My sister is an interpreter. She didn't do any special "interpretation" course, just majored in the language/area studies and then lived in the country.

take a look at Kalamazoo in Michigan; small LAC where almost everyone spends a semester abroad.

I don't know if there are any colleges/universities that offer degrees in interpretation. There are however a number of independent language institutes that offer some training, and some individual states have formalized examination systems for certification to work as a court interpreter.

Google "language interpretation training" and see what pops up.

Good luck!

Middlebury is supposed to be amazing for foreign languages.

I think I've heard U Pittsburgh is good for languages and study abroad too.

Univ. of Minnesota-Twin Cities has pretty good linguistics and language programs

If you are looking for both depth and breadth of language offerings, the better big state universities (Wisconsin, Berkeley, UCLA, etc.) will run rings around the smaller colleges, even Middlebury and Smith, which are the two liberal arts colleges with the highest percentage of language/area studies majors.
