I like to self-study languages and I’ve learned Spanish, Korean, and Arabic. However, I’ve only taken Spanish in school so I don’t have a way of showing that I can speak the other languages. I spend a lot of time on them and I’m pretty fluent so I think it might be helpful in my application. How should I include this and is it even something admissions officers would care about?

As a way to prove your fluency, you may want to look into standardized tests for the languages you’ve studied. I think its valid to describe your studies as an EC and admissions officers would definitely care about them in that context.
