I just started learning piano and want to become better at it. I do not want to major in music. However, I would consider a minor in music if it was possible. Does CMU have introductory courses for piano in which I can enroll even if I wasn't accepted into the School of Music (I was accepted into Dietrich).

Keep in mind I have little experience in piano and have never taken an ABRSM exam! I started playing the piano a week ago.

A music minor is a fairly significant commitment at CMU, and I would question how serious you are about pursuing this multi-year commitment if you’ve only been playing the piano for a week.

Nevertheless, CMU does offer some introductory music courses, and what it doesn’t offer you can access via cross registration at Pitt.

When I went to Sleeping Bag Weekend, a few of the students at What’s It Like To Be a Student At CMU said they still practice an instrument. Some minored in said instrument, but I think one or two were just learning it on the side.

^ it is easier to keep playing an instrument on the side by joining Kiltie Band (no advanced level required) or All University Orchestra, which has a much more challenging repertoire, but I think that AUO’s piano position is for guest music performance majors. Other than that, unfortunately, these bands don’t have pianos.
