So I was deferred early action from UVA and MIT. Would it be a good idea to get possibly another letter of rec to send to these colleges? I have already updated them with new senior extracurriculars and all that.
No, an additional letter of recommendation will not tip the scales.
It depends on the school. Some schools recommend sending a senior year teacher rec after being deferred, some schools don’t allow it. I’m not sure about MIT, but I know that UVa does not allow/read additional recs
Many universities have defined limits on the number of recommendations an applicant is permitted to submit. Were you to exceed this constraint, the school could easily feel that you were attempting to take an unfair advantage in comparison to your competitors. In sum, you’ve had “your shot,” now it’s time for the process to grind to decisive conclusions.
Unless the recommendation says something important about you that the other letters haven’t covered, I wouldn’t send it.
Probably not. If anything, I might contact an admissions counselor at the school to let them know I’m still interested, but additional rec letters at this point in the process will probably only be more of a burden to the people reading apps.

February and March are THE BUSIEST period in the entire annual admissions
cycle. I’m sure staffers in UVa’s Admissions Office have nothing better to do
than politely to squander their time with yet another “continued interest”
conversation. Try considering this matter from THEIR perspective.
If you had strong recommendations before, then another one won’t tip the scales. Anything at this point would have to be very significant.
