Letter of Recommendation Senior Year Teacher????

So I initially asked my math and science teachers for letters of reccomendation. However, I am applying to a selective school that requires a reccomendation from a Math/Science teacher and then one from a humanities teacher. I asked my junior year English teacher since she already had wrote me one my junior year for a program I applied to. However, I do not feel she knows me super well and much outside of the classroom. I can predict that her reccommendation is like so and so is an excellent student. However, I have no clue outside of that what she may say and I don’t know if it gives the depth into who I am outside of a solid student.

It is my senior year now and I am taking AP Macroeconomics, a subject I truly enjoy as I plan to most likely double major in economics/ entrepreneurship with some form of engineering. I feel that she knows me very well as she is the Dean of Students so I have known here since last year (not from disciplinary measures) She is involved in student government so she can discuss the impact I have had, and she understands and has stated I have a passion for business (Which I do)

I feel everyone says your teacher reccomendations should be from junior year teachers because it is recent and they know you for a whole year. However, I feel this person knows me inside the classroom, as well as outside and can truly write a deep and meaningful reccomendation. Would colleges look down on a senior year teacher reccomendation?

I think it would be fine, especially if the recommendation is dated in December so it is clear you were a student in his/her class for a period of time.
