I really know nothing about the application process, but I know I'm going to have to get letters of recommendation at some point, so my question is: I know that there's at least 3 or 4 people I can count on a glowing letter from, but how much is too much? If i send in a lot of letters that say i'm fantastic, would that hurt my chances due to seemingly insincere or "you write it, i'll sign it" type letters?

Two is usually fine. There's no point in sending 3 if the third is just going to repeat the first two. The answer to your second question is no. In fact, by far the majority of rec letters to selective schools will probably say that the kids are fantastic.
