2 years at community college with a 3.8 studying economics, then transfer to Uchicago to finish economics degree. Would that be enough to get into one of the target MBA programs. Id like to stay at Chicago or go to Stern.

This is kind of a weird question, there are so many what ifs… you need to get into UChicago first, and then do well. Then work for a few years at a well respected firm/company (or something else that gets you noticed, this is just the most traveled path) and then get in to an MBA program.

If the question is can you be on track to get into a top MBA program from UChicago, the answer is certainly. On the other hand, if its all of those pieces coming together, I don’t know, it won’t be easy.
