I’m accepted to both with near full tuition off. I want to double major in Computer Science and Economics or Finance. Anyone think that there’s a clear winner here, or should I just go with my gut when decision time comes around?

Marist has a partnership with IBM for CS students.
For Finance/Economics I’d go with Syracuse as the stronger of the two.
One is in a major city that’s also industrial/deindustrialized, the other is also in a deindustrialized town (home to Vassar college, too) but 1H30 to NYC. Sports are better and more important to college life at Syracuse (can be a plus or a minus), to the point it’s just gotten fined by the NCAA for violations (and to be fined by the NCAA, it has to be pretty egregious).
Both have a different “feel” - have you visited and spent an overnight there?
After you visit, “go with your gut”, I don’t think you can choose wrong.
Would it make more sense to go to Marist then, with the idea of pursuing an MBA elsewhere later on? Get the best of both words by getting a strong CS degree with a decent degree in econ/finance, and heading on to get a more prestigious MBA?
Yes, it would make total sense. Make sure to have a strong CS degree with econ + math/stats classes - especially since CS majors are now quite “recruited” for MBAs, as long as they have the 2-5 years of requisite solid work.
Have you visited and spent an overnight at both? You really should before you make a decision. What seems great “on paper” may not once you’re there in person. Don’t make the final decision before spending some time on each campus.

I went on an official visit for athletics recruitment at Marist, it was a 2 night stay and I loved it. I haven’t been to Syracuse, but I’m planning a day visit soon. I’d participate in Athletics at Syracuse as well, but I wouldn’t be the same kind of key player on the team. Big fish or small fish kind of deal, I guess.
They’d both end up costing about 18k per year.
Then it’ll really come down to “gut feeling” - although the CS -> MBA idea sounds good.
