I wanted to take Math 104 this semester, but of the 4 classes offered, 1 conflicts with my schedule(Smith), 2 are full, and the 4th apparently has a bad professor. I'm thinking of waitlisting one of the full ones, since I've been told people drop math classes en masse. Is this true for upper divs?

Yes. Also, they will usually expand the class size a bit to let the people on the waitlist in. Which is kind of funny because usually enough people drop eventually such that the class size drops back down anyway.

Ok, good. Does anyone know which of Dahl, Klass, and Oeding is better?

If you’re not familiar with these sites you should use them :)
