math major + econ major or math major + econ minor + EE minor

I am third year undergraduate studying mathematics. I do not want teach, and have been thinking of picking up a second major or some minors. I've narrowed it down to two possibilities.

Mathematics major, Economics major, or
Mathematics major, Economics and Electrical Engineering minor

I am not very interested in Economics, but I feel like the double major could help greatly with finding a job or going to grad school in something other than math.

I am interested in learning about EE, but it is too late for me to double major, and I am not willing to spend extra years in college for it. I feel like if I minor in EE, I'll gain some knowledge in the discipline that could help me with finding jobs, or even allow me to get a Masters in EE. I can also easily pick up an Economics minor, so I think "why not?"

Which of these would help more in the future? The first tells employers that I really know math and that I really know economics. The second tells them that I really know math, but I am also familiar with EE and economics.

I'm more interested in EE than Econ, but if it doesn't help significantly, I might just get a double major in economics.

Please offer your opinions. It would be greatly appreciated. Thank you.

Since you aren't really interested in Econ, I'd recommend going with the double minor. Having a more broad education will give you much greater flexibility in terms of potential jobs and grad programs, and since you seem somewhat undecided about your future, I think the double minor would be your best option right now. Hope this helps.

math major with that double minor sounds like a great idea.
