I am extremely analytical. I am taking a knowledge/logic course and I easily write papers which always receive full marks (The class is not easy, most of my peers struggle). Sure it doesn't sound like much, but I believe it is at the core of any successful engineering education.

Unfortunately, my skill is not evident anywhere in my college apps. It is not helping me write admission essays, its not an extracurricular activity, and my A+ in that class doesn't mean much. Sure my test scores are higher, but I feel like this is being undervalued.

Don’t take this the wrong way but I’m pretty sure most students who are accepted to top schools are very analytical… It’s sort of like writing an essay about being good at writing or having strong leadership skills. They’re more or less prerequisites of being a top student, not a special talent.

My suggestion would be to think of something totally wacky, and write about from an analytical point of view in your essays. You could either make it academically rigorous, which would exemplify just how solid your logic is, or you could have a bit of fun and communicate just how well you can apply formal thinking processes to absurd things.
With regards to engineering, you might want to look at some material, process, or theory and analyze it from a zany angle that would never be discussed by others, giving admissions officers a good look at the sorts of insights you can develop with your thinking prowess.
