Need Easter menu for 4 with no ham

If you like lamb, it may be a good time for crown roast. It’s really pricey, so best for small crowd. Pork crown roast is more affordable - we did that one year, based on the affordability advise from local butcher.

My Irish mom used to make the best manicotti (crepe style) for Easter with the ham. One if my kids has a 4:30 flight back yo college do we are doing brunch with the ham (I’m not a ham fan but she loves it).

We always do rack of lamb with Julia Child’s recipe from The Way to Cook. If you get two racks (which you’ll want for four) you can interlace them which is nice and festive.

If it’s just our core immediate family of 3, we do a small boil or surf & turf.

We usually have poached salmon with dill sauce (Ina Garten recipe) along with green beans almandine. We are traveling to see our older D and her family and they’ll probably weigh in on apps and dessert.

This thread reminded me that we sometimes used to serve dinner guests Coquille St Jacques (scallops in cheese sauce) and also ham along with rice and salad and veggie. That gave and assortment of food choices. Perhaps this year with just 3 of us for Easter we should see if daughter would like to switch things up and do Coquille St Jacques .

I don’t celebrate Easter, but I also do not like ham, and have never made it. I celebrate Passover. I do not like brisket, though had it as a child on such holidays!

We are 5 for Passover. In recent years, I have made rack of lamb, rib roast (roast beef), and Coq Au Vin (chicken in red wine). This year, it’s going to be rack of lamb. Just bought these in fact.

We are Polish so we have pierogi, blintzes, kielbasi and horseradish, deviled eggs, ham, Paska/babka white bread, and our Irish relative bring potatoes obrien.

You could do something fun and pick a country and see what they eat!

Wrong thread? The OP is asking for Easter menu. I think there’s a Passover recipe thread somewhere else.

Sorry, but I didn’t think I was providing any recipes and just talking of what could be the main course, which seems a bit interchangeable whether Easter or Passover.

Actually, the menus I’m seeing here (other than ham) can be for any holiday…or nice dinner meal. I love seeing these different combinations.

I try to get Nantucket Bay scallops when they are in season (November-March) and this is one of the recipes I make. It’s so good!!

I think having Passover food for Easter would be fine. Jesus was Jewish.

I do too! I’ve never been a lamb fan. Chicken is good idea for small group.

To others, I know I could freeze leftover ham. I’ve done that most years but H does not eat leftovers well and hard to find small spiral ham but I might. I will check with the D who will be here with her H in case there is something he would like. Sadly he is allergic to shellfish so no shrimp or scallops. I love salmon but make it at least once a week so not special.

Might explore pork tenderloin or rib roast recipes. Also have to consider timing with church. If I thought we could get it together for early service I’d do brunch stuff. We’ll see. Usually H sings both services and we’ve eaten late but I doubt he will this year
