Need SAT contingency plan

I plan to take the subject test in the coming test date in October. However, in the case that I don't do as well as I hope, which of the following plans would be more suitable (given that I also need to take reasoning again):

After subject tests in October, take reasoning in November, and then subject tests again in December if needed.

After subject tests in October, take them again in November, and then reasoning in December.

Would it be wise to try the subject tests in consecutive test dates since the material might be fresh in my mind? Or should I prioritise reasoning (currently at around 2150).

The answer to your last question depends on the schools you are applying to. Specifically, do you need subject tests, and does your SAT reasoning score put you in the range where it is not a liability when applying to them? Note that you can also take the ACT, which has different test dates, to get more shots at improving the “SAT reasoning or ACT” score if you use up the SAT test dates on subject tests.

I need 2 subject tests. SAT in range for all, but low for some colleges. ACT not an option.

You said you have a 2150. That’s fine. No school will reject you for that. They will reject you for not having a complete application. Prioritize subject test.
