I want to apply as an English major to a few of the top schools (Yale, Brown, Columbia).

However, my school doesn't offer AP english junior year. Do the top schools somehow take this into account? I feel that I have a chance at a 5 on the AP english test if I go through a PR book. Would this compensate?

my school didnt have AP english junior year either, we had honors english. But we have AP english senior year and we are taking both AP Lit and Lang at the end

You should be fine if you do AP English your senior year as my school has it, I dont think its worth self studying for an AP test if you are going to do AP your senior year

Considering you are taking full advantage of your school’s opportunities, it cannot go against you, dont worry about it

Colleges do not penalize you for not taking what’s not offered.

Our local high school does not have AP English for juniors. Every year, it sends quite a few to Ivies and other top schools. AP scores are not really important for admissions; they are used after you’re admitted to award you credit or placement.

Certainly, self studying for the exam would show initiative. Personally, though, I feel more attention would be given to your writing as exemplified in your college essays.
