Hey guys. I have a question!

These are the only university courses that my Canadian high school offers:

-UWinnipeg Chemistry
-UWinnipeg Calculus
-UWinnipeg English
-AP Lit
-AP Psychology

I would love to take LOTS of AP courses... like US History, World History, Government, Art, Biology, Spanish, etc.

BUT... the thing is I am not a science/math person, so I am not interested in taking U Chem and Calculus...

So I am going to take AP Psychology next year.

Would this hurt my acceptance to TOP US colleges? I mean... it's not my fult not liking math/science...

And my school school doesn't offer any... : (

Not everyone likes it, including myself. I despite some subjects. But I still take them because I know it will help me for admissions.
It's your choice, but if you really want to get into TOP US Schools, then you better reconsider.

I'm sure colleges consider your circumstances. That said, it's always better to take what you can (unless you know you will do horribly in it).

Even if you don't want to take Chem/Calc, you really ought to take AP Lit. If that's what you like, then your excuse for not taking the first two doesn't stand.

Top colleges are looking to see that you took the hardest classes available to you. They know you can't invent AP opportunities where none exist, and they won't hold it against you.

Do you have a community college nearby? You could probably dual enroll to take more courses that you like and that would challenge you. I'm in the same boat and ended up taking more social studies-centric courses there. Also AP Lit would be a good idea to take.

Are there honors? You can take courses online, or as others have said you can take some classes at community college.

Also, if you're that interested you could self-study. I don't know what year you are, but if you are not going into senior year, you could self-study some APs and do well during junior year. That would definitely show motivation.
